After studying pharmacology at McGill University and working for many years in the Montreal restaurant scene, I decided to combine my rising passion for sommellerie to my science background and to pursue an oenology and viticulture training in France.
I then worked in Quebec and British Columbia, until a job opportunity brought me to Nova Scotia in 2015. Initially working as a vineyard manager and assistant winemaker, the fruit lover I am traded grapes for apples, honey and other fruits, to become Muwin Estate Wines and Bulwark Cider head wine and cider maker.
The diversified experience that I acquired, as well as a growing demand for consultation services in wine, fruit wine and cider making, brought me in 2017, to become a consultant in oenology. Since, I accompanied the establishment, development and growth of more than ten businesses in several Canadian provinces as well as internationally.
My wines and ciders were awarded several prizes and recognitions. Amongst others, figure a heritage cider that finished “Best in class” at the GLINTCAP competition as well a Swedish wine of wild blueberry that wan a bronze medal at the London Spirit Competition as well as being on the list of several Scandinavian Michelin Stars’ restaurants.
I offer personalised services that are tailored to each different project and accompany my customers throughout every phases of their venture; from the conception and design of the winery, the choice of equipment, to the development of a wine and cider program and the market entry of the finished products.
My services also include ongoing strategic management of production, development of customized operational procedures as well as personalised training sessions to production and front of the house teams.
Over the years, I have also developed and dispensed several tasting classes, curated wine lists for restaurants as well as organised multiple food and wine pairing dinners. I have also been a substitute teacher at the Nova Scotia Community College in a cider making class.
